  • 175 g Baking spread (or butter) (softened, unsalted)
  • 175 g Caster sugar
  • 3 Eggs (large)
  • 2 tsp Vanilla extract
  • 175 g Self raising flour
  • 25 g Black food colouring
  • 200 g Butter (softened, unsalted)
  • 400 g Icing sugar
  • 1 tsp Vanilla extract
  • 12 tbsp Milk
  • Green food colouring
  • Yellow food colouring
  • 150 g Tinned custard
  • Green food colouring
  • Candy eyes
  • Green sprinkles

Instructions

  1. Preheat your oven to 140C Fan/325F/Gas Mark 3. Line your cupcake tin with cupcake cases; ideally, choose black ones for that spooky effect.
  2. In a mixing bowl, combine the baking spread and caster sugar. Using an electric mixer, beat together until smooth and fluffy—about 5 minutes.
  3. Add in the eggs one at a time along with the vanilla extract, whisking well after each addition.
  4. Gradually fold in the self raising flour until just combined. Mix in the black food coloring until you achieve an even color.
  5. Divide the batter evenly among the cupcake cases. Bake in the preheated oven for 25–30 minutes or until a skewer inserted into the center comes out clean.
  6. Allow them to cool completely on a wire rack.
  7. Once cooled, use a cupcake corer or knife to make holes in the center of each cupcake. Add a bit of green food coloring to the custard and mix well. Spoon this mixture into each cupcake hole.
  8. In another bowl, mix together softened butter and icing sugar until smooth. Add vanilla extract, milk, and green/yellow food coloring until you achieve a bright green shade; adjust milk if needed for consistency.
  9. Use a piping bag to pipe on generous swirls of buttercream atop each cupcake or simply spread it on with a spoon. Finish by decorating with candy eyes and green sprinkles.
