  • 6 ounces mozzarella pearls (fresh)
  • 1 demi baguette
  • ½ cup basil pesto
  • gel food coloring (black)
  • 12 ounces cherry tomatoes
  • olive oil
  • salt
  • black pepper
  • red pepper flakes
  • fresh basil
  • balsamic vinegar glaze

Instructions

  1. Preheat the oven to 350°F.
  2. Place mozzarella pearls in a silicone skull mold on a baking sheet and bake for 6–7 minutes until melted.
  3. Press mozzarella into molds and let cool.
  4. Increase oven temperature to 475°F, halve cherry tomatoes, place cut-side down on parchment-lined baking sheet, drizzle with olive oil, season with salt, black pepper, and red pepper flakes. Roast for 10–15 minutes until soft.
  5. Slice the baguette into ½-inch pieces and toast on another baking sheet for 8–10 minutes.
  6. Mix basil pesto with black food coloring in a bowl until desired hue is achieved.
  7. Spread black pesto over toasted bread slices and return to the oven for another 8–10 minutes until edges are golden.
  8. Top each slice with roasted cherry tomatoes and mozzarella skulls.
  9. Serve on a platter drizzled with balsamic glaze and sprinkle fresh basil.
