Ingredients

  • ¼ Cup olive oil
  • 8 basil leaves (fresh)
  • kosher or table salt (as needed)
  • 10 Balls fresh mozzarella (bocconcini, ciliegine, “cherry sized”)
  • 5 black olives (whole pitted, medium or large)
  • ½ Pound chicken slices (thinly sliced)
  • 1 ½ Ounces balsamic glaze
  • 8 ½ Ounces sun dried tomatoes (packed in oil, julienne cut)
  • flake salt (as needed)

Instructions

  1. Wash and dry the basil leaves. Slice each olive in half.
  2. Place a mozzarella ball on a serving platter and wrap it with a slice of chicken.
  3. Press half an olive into each mozzarella ball to create the 'eyeball.'
  4. In a bowl, mix olive oil, chopped basil, and a pinch of salt; drizzle over the assembled eyeballs.
  5. Finish by drizzling balsamic glaze on top and refrigerate for 15 minutes before serving.
