  • 1 lb ground turkey
  • 2 medium sweet potatoes
  • 2 small zucchini
  • 2/3 cup shredded parmesan cheese
  • 1 1/2 tsp garlic powder
  • 1 tsp rosemary
  • 5 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube sweet potatoes; toss in a baking dish with 2 tablespoons olive oil, 1/2 teaspoon garlic powder, rosemary, salt, and pepper.
  3. Bake sweet potatoes for about 30 minutes until tender.
  4. Meanwhile, heat a skillet over medium heat with 1 tablespoon olive oil; add ground turkey with remaining garlic powder, rosemary, salt, and pepper. Cook until browned.
  5. Chop zucchini into bite-sized pieces.
  6. Combine cooked turkey and chopped zucchini with baked sweet potatoes in the baking dish.
  7. Bake for an additional 10 minutes to meld flavors.
  8. Drizzle with remaining olive oil and top with parmesan cheese; bake until cheese is melted (about 10 minutes).
  9. Allow to cool slightly before serving.
