  • ½ cup brown sugar
  • ½ cup ketchup
  • ½ cup soy sauce
  • ⅓ cup rice vinegar
  • 1 small knob fresh ginger, minced
  • 3 cloves garlic, minced
  • 4 pounds boneless, skinless chicken thighs (or breasts)

Instructions

  1. In a sealable plastic bag or large dish, whisk together brown sugar, ketchup, soy sauce, rice vinegar, ginger, and garlic. Reserve ½ cup of marinade for basting.
  2. Add chicken to the marinade, seal the bag or cover the dish, and refrigerate for at least 2 hours or overnight.
  3. Preheat your grill to medium heat and oil the grates. Remove chicken from marinade and place on grill.
  4. Grill each side for about 20-25 minutes, flipping every 5 minutes while basting with reserved marinade until the internal temperature reaches 165°F.
  5. Remove from grill and let rest before serving garnished with chopped cilantro and green onions.
