  • 2 cod fillets (about 6 oz each)
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh lemon juice
  • 1 tsp fresh thyme, chopped
  • 2 cups cherry tomatoes
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp balsamic vinegar
  • 1 clove garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1/2 cup heavy cream
  • 1/4 cup sour cream or Greek yogurt
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh dill, chopped
  • 1 tsp lemon zest
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp butter

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss cherry tomatoes with olive oil, salt, black pepper, balsamic vinegar, and minced garlic. Spread on a baking sheet and roast for 20 minutes until blistered.
  3. Pat cod fillets dry and rub with olive oil, spices, lemon juice, and fresh thyme.
  4. Grill cod fillets for 3-4 minutes on each side until golden and flaky.
  5. For the creamy dill sauce, melt butter in a saucepan, then stir in heavy cream, sour cream (or Greek yogurt), Dijon mustard, dill, lemon zest, salt, and pepper. Simmer for 2-3 minutes.
  6. Assemble by placing roasted tomatoes in a bowl topped with grilled cod and drizzled with sauce.
