  • 1 onion, diced
  • 2 ribs celery, diced

  • ¾ cup red apple vinegar
  • 6 cups low-sodium beef broth
  • 1 tbsp Worcestershire sauce
  • 3 sprigs fresh thyme
  • 1 cup pearled barley
  • Salt and pepper to taste
  • ¼ cup parsley, minced

Instructions

  1. Sear the seasoned beef in hot olive oil in batches until browned. Set aside.
  2. In the same pot, sauté onion, celery, and carrots for about 5 minutes; add garlic and cook for another minute.
  3. Deglaze the pot with red apple vinegar until reduced by half.
  4. Add beef broth, Worcestershire sauce, thyme, and seared beef; let it simmer for about 45 minutes.
  5. Stir in pearled barley and simmer for an additional 45–60 minutes until tender.
  6. Adjust consistency with water or broth; season with salt and pepper before serving. Stir in parsley just before serving.
