  • 4 cloves garlic (chopped or crushed)
  • 1 medium onion (minced)
  • 1/2 cup chicken stock or white grape juice
  • Zest from 1 medium lemon
  • 2 tablespoons olive oil
  • 4 tablespoons butter (divided)
  • 2 tablespoons chopped parsley
  • Chili flakes, salt, and pepper to taste

Instructions

  1. Clean mushrooms and trim stems if needed; keep whole or cut large ones in half.
  2. Heat olive oil in a large skillet over medium-high heat. Add mushrooms and sauté for 3-5 minutes until browned.
  3. Stir in 2 tablespoons of butter, garlic, and onions; cook until softened, about 3-5 minutes.
  4. Pour in chicken stock or grape juice along with lemon zest, juice, and chili flakes. Cook for an additional 2 minutes until slightly reduced.
  5. Add remaining butter and parsley; season with salt and pepper to taste. Serve warm.
