- 1 lb ground beef
- ½ cup minced onion
- 2 tablespoons minced garlic
- 28 oz crushed tomatoes
- 4 cups low-sodium beef broth
- 2 cups water
- 2 cups reginetti pasta (or broken lasagna noodles)
- Optional: ricotta cheese for serving
- Optional: grated Parmesan for serving
- Heat olive oil in a large pot over medium heat. Sauté minced onion until softened, about 3-4 minutes; stir in minced garlic for an additional minute.
- Add ground beef to the pot and cook until browned, breaking it apart as it cooks.
- Stir in crushed tomatoes and seasonings—bay leaf, basil, parsley, oregano, black pepper, and optional red pepper flakes.
- Pour in beef broth and water; bring to a boil then reduce heat and simmer for about 10 minutes.
- Add pasta and continue simmering until cooked al dente (8-10 minutes).
- Remove bay leaf before serving; top each bowl with optional ricotta and Parmesan.
