  • 1 tablespoon olive oil
  • 1 lb ground beef
  • ½ cup minced onion
  • 2 tablespoons minced garlic
  • 28 oz crushed tomatoes
  • 4 cups low-sodium beef broth
  • 2 cups water
  • 2 cups reginetti pasta (or broken lasagna noodles)
  • Optional: ricotta cheese for serving
  • Optional: grated Parmesan for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté minced onion until softened, about 3-4 minutes; stir in minced garlic for an additional minute.
  2. Add ground beef to the pot and cook until browned, breaking it apart as it cooks.
  3. Stir in crushed tomatoes and seasonings—bay leaf, basil, parsley, oregano, black pepper, and optional red pepper flakes.
  4. Pour in beef broth and water; bring to a boil then reduce heat and simmer for about 10 minutes.
  5. Add pasta and continue simmering until cooked al dente (8-10 minutes).
  6. Remove bay leaf before serving; top each bowl with optional ricotta and Parmesan.
