  • 8 oz dry rotini pasta
  • 9 oz hard turkey slices, chopped
  • 6.5 oz turkey pepperoni, chopped
  • 1 cup canned artichoke hearts, drained & quartered
  • 2 cups cherry tomatoes, halved
  • 1 cup olives, pitted & halved
  • ½ cup pepperoncini, sliced
  • 8 oz mozzarella pearls
  • ¼ cup red onion, thinly sliced
  • ⅓ cup fresh basil, thinly sliced
  • ½ cup olive oil
  • ¼ cup red apple vinegar
  • 2 cloves garlic, minced
  • 1 Tbsp Italian seasoning
  • ¼ tsp red pepper flakes
  • Salt & black pepper, to taste

Instructions

  1. Cook the rotini pasta according to package directions; drain and let cool.
  2. In a jar or bowl, whisk together olive oil, red apple vinegar, garlic, Italian seasoning, red pepper flakes, salt, and pepper to make the vinaigrette. Chill.
  3. Prepare the salad ingredients by chopping turkey and pepperoni, halving tomatoes and olives, slicing red onion and basil.
  4. In a large bowl, combine cooled pasta with all prepared ingredients. Drizzle with desired vinaigrette and toss until well coated.
  5. Refrigerate for at least 30 minutes before serving for enhanced flavor.
