  • 1 cup croissant crumbs (about 23 croissants)
  • ½ cup sliced almonds
  • ¼ cup almond flour (optional for extra flavor)
  • ½ cup powdered sugar (for glaze)
  • 2 tbsp almond milk (or regular milk for glaze)
  • ½ tsp almond extract (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, mix melted butter and brown sugar until smooth. Add eggs one at a time and stir in vanilla extract.
  4. Fold the dry ingredients into the wet mixture until just combined.
  5. Gently fold in croissant crumbs, sliced almonds, and almond flour if using.
  6. Pour batter into the prepared pan and bake for 25–30 minutes or until golden brown. Check doneness with a toothpick.
  7. Cool before cutting into squares.
  8. While blondies cool, mix together powdered sugar, almond milk, and almond extract to prepare the glaze. Drizzle over cooled blondies if desired.
