  • 1 cup granulated sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/3 cup strawberry jam
  • 2 ounces cream cheese
  • 2 cups powdered sugar
  • 1/4 cup hot milk

Instructions

  1. Prepare strawberry powder by blending freeze-dried strawberries into a fine powder.
  2. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  3. In a bowl, cream together the butter, sugar, and vanilla until light and fluffy. Add the egg and mix well.
  4. Gradually incorporate the flour, baking soda, part of the strawberry powder, and salt until combined. Stir in the strawberry jam.
  5. Roll dough into balls and place on the prepared baking sheet.
  6. Bake for 8 minutes; gently tap to flatten, then bake for an additional 2–3 minutes until golden.
  7. For icing, beat together cream cheese, powdered sugar, hot milk, remaining strawberry powder, and vanilla until smooth.
