  • 1 small butternut squash, peeled and diced (about 3 cups)
  • 2 tablespoons olive oil
  • 1½ cups orzo pasta
  • 3 cups vegetable broth
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • ¼ cup heavy cream
  • 2 cups baby spinach, roughly chopped
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Toss diced butternut squash with olive oil, salt, and pepper; spread it on a baking sheet.
  2. Roast the squash for about 25–30 minutes until tender.
  3. In a large saucepan over medium heat, melt butter and sauté minced garlic for about one minute. Stir in orzo pasta and lightly toast for about two minutes.
  4. Add vegetable broth to the saucepan; bring to a simmer and cook for 10–12 minutes until orzo is tender.
  5. Stir in grated Parmesan cheese and heavy cream, then add chopped spinach, cooking just until wilted.
  6. Gently fold in the roasted squash before serving warm.
