  • 6 tablespoons granulated sugar (for cranberry layer)
  • 1/2 cup unsalted butter (melted)
  • 1/4 cup granulated sugar (for crust)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup + 1 tablespoon all-purpose flour (for crust)
  • 3 large eggs
  • 1 cup granulated sugar (for lemon filling)
  • 3 tablespoons all-purpose flour (for lemon filling)
  • 1/2 cup fresh lemon juice (about 3 lemons)

Instructions

  1. Rinse cranberries and combine them with water and 6 tablespoons of sugar in a saucepan. Boil then simmer until softened.
  2. Preheat the oven to 325°F and line a baking dish with parchment paper.
  3. Mix melted butter, vanilla, 1/4 cup sugar, salt, and flour in a bowl to create the crust. Press into the dish evenly.
  4. Bake for about 16 minutes until golden brown. Cool before adding layers.
  5. Whisk together remaining sugars, eggs, and lemon juice in another bowl.
  6. Spread cooled cranberry mixture over the crust followed by the lemon mixture.
  7. Bake again at 350°F for about 43-45 minutes until set.
  8. Cool completely before slicing; sprinkle with powdered sugar before serving.
