  • 4 medium-sized sweet potatoes
  • 1 cup fresh cranberries
  • 2 medium apples (Granny Smith or Honeycrisp)
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • A pinch of salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Clean the sweet potatoes, poke holes in them with a fork, and place them on a lined baking sheet. Bake for 45–60 minutes until tender.
  3. In a mixing bowl, combine chopped apples, cranberries, brown sugar, cinnamon, butter, and salt.
  4. Let baked sweet potatoes cool slightly before cutting them in half and scooping out most of the flesh into the filling mixture.
  5. Mash the sweet potato flesh lightly with a fork and mix it with the filling ingredients until combined.
  6. Spoon the filling back into each potato half and return to the oven for an additional 15–20 minutes until heated through.
