  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup old-fashioned oats
  • 1 cup corn flakes
  • 1 cup chopped and toasted pecans
  • 1/2 cup coconut flakes
  • 1 cup peanut butter chips
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Toast the pecans in a skillet over medium heat for about 3–5 minutes until fragrant. Let cool.
  2. In a mixing bowl or stand mixer, cream the softened butter until light and fluffy. Add both sugars and beat well.
  3. Incorporate the eggs and vanilla extract until fully combined.
  4. Add flour, salt, baking powder, and baking soda; gently mix without over-blending.
  5. Fold in oats, corn flakes, toasted pecans, coconut flakes, peanut butter chips, and chocolate chips.
  6. Chill the dough for at least one hour.
  7. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  8. Scoop dough onto prepared sheets, leaving space between each cookie.
  9. Bake for approximately 12–14 minutes until edges are golden yet centers remain slightly shiny.
  10. Allow cookies to cool on sheet before transferring to a wire rack.
