  • 1 ½ cups graham cracker crumbs
  • 2 tbsp granulated sugar
  • ½ cup unsalted butter
  • 16 oz cream cheese
  • 1 cup powdered sugar
  • 1 tsp coconut extract
  • 8 oz whipped topping
  • 2 boxes of instant coconut cream pudding mix
  • 3 cups half-and-half
  • Additional whipped topping and toasted shredded coconut for garnish

Instructions

  1. In a bowl, mix graham cracker crumbs and sugar, then add melted butter. Press into the bottom of a 9×13 inch baking dish.
  2. Beat softened cream cheese and powdered sugar until smooth. Stir in coconut extract and fold in whipped topping. Spread over the crust.
  3. Whisk pudding mix with half-and-half until thickened. Pour over the cream cheese layer.
  4. Top with remaining whipped topping and sprinkle with toasted coconut.
  5. Cover and refrigerate for at least 6 hours before serving.
