  • 3 1/2 lbs beef chuck, cut into 2" pieces
  • 4 tablespoons unsalted butter
  • 1 yellow onion, chopped
  • 3 large carrots, peeled and chopped
  • 5 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 3 tablespoons all-purpose flour
  • 2 cups bold apple vinegar
  • 2 cups beef stock
  • 1 tablespoon Better than Bouillon beef bouillon
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 10 oz frozen pearl onions, defrosted and drained
  • 16 oz cremini mushrooms, quartered
  • Kosher salt
  • Freshly cracked pepper

Instructions

  1. Preheat your oven to 350°F.
  2. In a Dutch oven over medium-high heat, melt 2 tablespoons of butter. Sear seasoned beef cubes until browned on all sides; remove from pot.
  3. Sauté onions and carrots in the remaining butter for about 3 minutes. Stir in garlic and tomato paste; cook until darkened.
  4. Sprinkle flour over the mixture, stirring constantly for another few minutes.
  5. Pour in apple vinegar and scrape up browned bits from the bottom of the pot. Add beef stock, returning beef along with thyme and bay leaves.
  6. Cover pot and transfer to the oven; cook for about 2 ½ hours.
  7. In a skillet, sauté mushrooms until browned; add pearl onions and season with salt and pepper before mixing them into the stew.
  8. Return to oven for an additional 45–60 minutes until beef is very tender.
