  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp dried thyme or Italian seasoning
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, and thyme; cook until golden brown on both sides.
  3. In the same skillet, sauté garlic until fragrant. Add mushrooms and cook until softened; stir in spinach until wilted.
  4. Add heavy cream and chicken broth to the skillet; simmer until slightly thickened.
  5. Place cooked chicken in the baking dish, pour sauce over it, and top with cheeses.
  6. Bake for 15-20 minutes until cheese is melted and bubbly.
