  • 1 ½ pounds chicken breast
  • ¾ cup avocado oil
  • 3 tablespoons lime juice
  • 1 cup long-grain white rice
  • 1 head romaine lettuce
  • 1 cup tomatoes
  • 1 avocado
  • 1 cup frozen corn
  • 1 can black beans
  • 3 chipotle chilis in adobo sauce (finely chopped)
  • 1 ½ teaspoon garlic powder
  • ¾ teaspoon salt
  • ¼ teaspoon salt (for rice)
  • 1 lime (zested plus 2 tbsp fresh lime juice)
  • ¼ cup chopped cilantro
  • ½ small red onion (chopped)

Instructions

  1. Marinate the chicken by mixing avocado oil, lime juice, chipotle chilis, garlic powder, and salt in a large bowl. Add chicken strips, coat well, cover, and refrigerate for at least 2 hours or overnight.
  2. Cook the marinated chicken in a skillet over medium-high heat for about 5 minutes until cooked through.
  3. In a pot of boiling salted water, add rinsed rice. Cover and simmer for 15–18 minutes until water is absorbed. Fluff with fork and mix in lime zest and cilantro.
  4. Assemble the bowl by layering rice, chopped lettuce, cooked chicken, diced tomatoes, avocado, corn, black beans, and red onions.
