Cheesy Taco Potatoes are a delightful fusion of baked potatoes and savory taco flavors, making them an ideal meal for any occasion. These hearty stuffed potatoes are loaded with seasoned ground beef and melted cheese, topped with fresh garnishes like sour cream, green onions, and tomatoes.

  • 4 large russet potatoes
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the potatoes under cold water, dry them, and pierce each potato several times with a fork.
  3. Rub each potato with olive oil and sprinkle with salt and pepper. Place them on a baking sheet.
  4. Bake in the preheated oven for about 45 minutes until tender.
  5. In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
  6. Stir in taco seasoning and water as per packet instructions; simmer for about 5 minutes.
  7. Once the potatoes are baked, cut a slit lengthwise on top of each potato and squeeze open.
  8. Fill each potato with seasoned beef and top with cheese.
  9. Return the stuffed potatoes to the oven for an additional 5 minutes until cheese is melted.
  10. Add toppings of sour cream, green onions, diced tomatoes, black olives before serving.
