  • 4 pounds beef short ribs
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup rice vinegar
  • 1/4 cup sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon black pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a mixing bowl, combine soy sauce, brown sugar, rice vinegar, sesame oil, garlic, ginger, and black pepper. Whisk until blended.
  3. Marinate the beef short ribs by pouring the mixture over them in a shallow dish. Allow marinating for at least 30 minutes or overnight.
  4. Heat a small amount of oil in a large oven-safe pot and sear the ribs on each side until browned (about 2-3 minutes). Pour remaining marinade over the ribs.
  5. Cover and slow roast in the preheated oven for about 3 hours or until tender. Remove ribs from pot and thicken the sauce using cornstarch mixed with water; simmer until thickened. Brush glaze over ribs and caramelize under broiler for an additional 5-10 minutes.
