  • 2 large yellow onions, thinly sliced
  • 3 tablespoons olive oil or unsalted butter
  • 2 cloves garlic, minced
  • 1 teaspoon sugar (optional)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 12 oz spaghetti or linguine
  • ½ cup reserved pasta water
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon balsamic vinegar (optional)
  • Fresh parsley, chopped for garnish

Instructions

  1. Caramelize the Onions: Heat olive oil or butter in a large skillet over medium heat. Add sliced onions and salt. Cook slowly, stirring occasionally until golden brown, about 30–40 minutes. Optionally add sugar halfway through.
  2. Cook the Pasta: While onions are cooking, bring salted water to a boil in another pot. Add spaghetti or linguine; cook according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  3. Combine and Serve: In the skillet with caramelized onions, add minced garlic during the last minute of cooking. Toss in drained pasta along with reserved water and Parmesan cheese. Stir until well combined; season with black pepper and balsamic vinegar if desired. Serve hot garnished with fresh parsley.
