12 ounces fettuccine or linguine
2 tablespoons olive oil
2 medium leeks, thinly sliced
8 ounces cremini mushrooms, sliced
3 cloves garlic, minced
1/2 cup vegetable broth
1/2 cup heavy cream
1 cup shredded Gruyere cheese
Freshly ground black pepper and salt to taste
Instructions
Cook pasta in salted boiling water according to package instructions until al dente; reserve 1/2 cup pasta water before draining.
In a large skillet, heat olive oil over medium heat. Sauté leeks for about 5 minutes until softened. Add mushrooms and cook until browned (7-10 minutes). Stir in garlic for an additional minute.
Pour in vegetable broth; let simmer for 3 minutes. Reduce heat to low and gradually stir in heavy cream followed by Gruyere cheese until melted.
Combine the cooked pasta with the sauce, adding reserved pasta water as needed for consistency. Season with salt and pepper to taste.
