  • 12 eggs
  • 1 stalk celery, rinsed and chopped
  • 1 green onion, rinsed and chopped
  • 4 tablespoons mayonnaise
  • 2 tablespoons creole mustard
  • ¼ teaspoon Cajun seasoning
  • 1 teaspoon hot sauce

Instructions

  1. Boil the eggs: Place eggs in a pot, cover with cold water, bring to a boil over medium heat, then cover and remove from heat. Let sit for 11 minutes.
  2. Prepare the filling: Cool the eggs in ice water, peel them, and slice each in half lengthwise. Remove yolks into a mixing bowl.
  3. Mix ingredients: Add chopped celery and green onion to yolks. Then mix in mayonnaise, creole mustard, Cajun seasoning, and hot sauce until smooth.
  4. Fill the egg whites: Use a spoon or piping bag to generously fill each egg white half with the yolk mixture.
  5. Serve chilled or at room temperature.
