  • 2 large boneless, skinless chicken breasts
  • 1012 oz penne or rigatoni pasta
  • 1 1/2 cups heavy cream
  • 3/4 cup freshly grated parmesan cheese
  • 4 garlic cloves, minced
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 tbsp butter
  • Salted water (for boiling)
  • 1 tbsp all-purpose flour
  • 1/2 tsp smoked paprika
  • Salt & black pepper, to taste
  • 1/4 tsp red pepper flakes (optional)
  • Fresh parsley, chopped
  • Extra parmesan cheese

Instructions

  1. Season chicken with Cajun seasoning. In a skillet, heat olive oil and butter over medium heat. Sear chicken for 4–5 minutes per side until fully cooked, then slice.
  2. Boil salted water in a pot and cook pasta according to package instructions until al dente; drain and reserve 1/2 cup pasta water.
  3. In the same skillet, melt butter, sauté garlic until fragrant, then whisk in flour and cook for 1 minute.
  4. Gradually add heavy cream while whisking continuously. Stir in smoked paprika, red pepper flakes (if using), salt, pepper, and parmesan cheese until melted.
  5. Toss cooked pasta with the sauce and sliced chicken. Adjust consistency with reserved pasta water if needed.
