  • 2 packs (400 g each) artesian flatbread
  • 5 tablespoons pesto
  • 1 cup fresh mozzarella, sliced
  • 4 roma tomatoes, diced
  • 0.25 cup fresh basil leaves, thinly sliced
  • 2 cloves garlic, minced
  • 0.25 cup parmesan cheese, grated
  • 0.5 tablespoon balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • Salt to taste

Instructions

  1. Preheat your oven to 220°C (425°F) and line a baking sheet with foil.
  2. In a mixing bowl, combine diced tomatoes, sliced basil, minced garlic, parmesan cheese, balsamic vinegar, olive oil, and salt; mix well and set aside.
  3. On the baking sheet, arrange the flatbreads and spread pesto evenly on each.
  4. Top with mozzarella slices and bake for about 10 minutes until cheese is melted and edges are crisp.
  5. Remove from the oven and let cool for a few minutes before adding the bruschetta mixture on top.
