  • ¼ cup fruit juice (as a bourbon substitute)
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons Dijon coarse ground mustard
  • 2 teaspoons garlic (minced)
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • 4 salmon fillets (about pounds, skins on)
  • 1 tablespoon extra virgin olive oil
  • 2 medium peaches (pitted, thinly sliced)
  • Parsley (for garnish)

Instructions

  1. In a medium bowl, mix peach preserves, fruit juice, olive oil, soy sauce, vinegar, mustard, garlic, salt, pepper, and red pepper flakes.
  2. Reserve half of the marinade and refrigerate. Marinate the salmon in the remaining mixture for 30 minutes to 1 hour.
  3. Preheat oven to 375°F (190°C). In an oven-safe skillet over medium-high heat, sear the marinated salmon skin side up for 2-3 minutes until golden brown.
  4. Flip the fillets skin side down and add sliced peaches around them. Cook for another 2-3 minutes.
  5. Pour reserved marinade over salmon and peaches. Bake for 12-15 minutes until salmon reaches an internal temperature of 145°F (63°C).
  6. Serve immediately garnished with parsley.
