  • 1 lb block cheese, shredded
  • 2 cups refried beans
  • 7 corn tortillas

Instructions

  1. Preheat oven to 425°F.
  2. Spread about 1/2 cup of enchilada sauce in the bottom of a baking dish.
  3. Layer corn tortillas over the sauce, followed by refried beans and shredded cheese.
  4. Repeat layers: sauce, tortillas, beans, cheese; top with remaining enchilada sauce and cheese.
  5. Cover with aluminum foil and bake for 20 minutes; remove foil and bake an additional 15 minutes until bubbly.
  6. Cool slightly before serving.
