  • 1 lb medium pasta shells
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 cup heavy cream
  • 2 cups milk
  • 1 teaspoon mustard powder
  • ½ teaspoon dried thyme
  • ¼ teaspoon garlic powder
  • 1 teaspoon hot sauce
  • 1 cup Gruyere cheese, shredded
  • 2 cups cheddar cheese, shredded
  • Optional: 2 large yellow onions for caramelizing

Instructions

  1. Slice the onions into even ¼-inch slices and caramelize them in a skillet with butter and olive oil over medium heat for about 40-50 minutes.
  2. In a separate large skillet, cook diced turkey bacon over low heat until crispy; set aside.
  3. Boil salted water and cook the pasta until al dente.
  4. In the same skillet used for bacon drippings, make a roux by whisking together flour and reserved drippings over medium heat.
  5. Gradually add heavy cream and milk while whisking continuously until smooth; then season with mustard powder, thyme, garlic powder, and hot sauce.
  6. Stir in shredded cheeses until melted; mix in caramelized onions and drained pasta.
  7. Add chopped turkey bacon before serving warm.
