- 2 teaspoons canola or vegetable oil
- 2 cloves garlic (minced)
- ½ tablespoon soy sauce
- ½ tablespoon Chinese mushroom sauce
- Salt and pepper to taste

- Bring a large pot of salted water to a boil. Prepare an ice bath.
- Blanch bok choy in boiling water for 1 minute, then transfer to the ice bath.
- Drain and pat dry.
