  • ½ pound baby bok choy
  • 2 teaspoons canola or vegetable oil
  • 2 cloves garlic (minced)
  • ½ tablespoon soy sauce
  • ½ tablespoon Chinese mushroom sauce
  • Salt and pepper to taste
  • Sesame seeds for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Prepare an ice bath.
  2. Blanch bok choy in boiling water for 1 minute, then transfer to the ice bath.
  3. Drain and pat dry.
  4. In a skillet over high heat, add oil and garlic; stir-fry until fragrant (30 seconds).
  5. Add bok choy; cook while stirring for 2-3 minutes until lightly browned.
  6. Stir in soy sauce and mushroom sauce; cook for another minute.
  7. Serve garnished with sesame seeds.
