  • 4 large russet potatoes (or 5 large red potatoes)
  • 1 cup mayonnaise
  • 2 tablespoons red apple vinegar
  • 1 teaspoon sugar
  • 1 red bell pepper (julienned)
  • 1 cup julienned carrot sticks
  • 1 stalk celery (diced)
  • ½ cup white onion (minced)
  • Salt and pepper to taste

Instructions

  1. Wash the potatoes thoroughly and place them in a large pot covered with water. Add salt and bring to a boil. Cook until tender, about 15 minutes. Drain and cool before peeling if using russet potatoes.
  2. In a mixing bowl, whisk together the mayonnaise, red apple vinegar, sugar, and salt until smooth.

  4. Cut the cooled potatoes into cubes or slices as desired. In a large mixing bowl, combine potatoes and chopped vegetables.
