  • 2/3 cup vegetable oil
  • 2 large eggs, room temperature
  • 3/4 cup brown sugar, packed (light or dark)
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream, room temperature
  • 1 tsp pure vanilla extract
  • 23 large honey crispy apples, grated using the large holes on a box grater (~1 1/2 cups; can keep the skin on)
  • 1/4 cup salted butter
  • 1/2 cup dark brown sugar, packed
  • 2 Tbsp heavy cream
  • 1/2 tsp pure vanilla extract
  • 1 cup powdered sugar, sifted

Instructions

  1. Preheat your oven to 350°F and line a 9×9-inch nonstick pan with parchment paper.
  2. In a large bowl, whisk together all dry ingredients until well combined.
  3. In another bowl, mix all wet ingredients until smooth.
  4. Combine the wet mixture with the dry ingredients, folding gently until just mixed.
  5. Fold in grated apples until evenly distributed.
  6. Pour batter into the prepared pan and bake for 35-40 minutes or until a toothpick comes out clean.
  7. For icing, melt butter, brown sugar, and heavy cream in a saucepan until boiling; whisk in vanilla and powdered sugar until smooth.
  8. Drizzle warm icing over the cooled cake and serve.
