  • 2 ½ pounds butternut squash
  • 1 tablespoon extra virgin olive oil
  • ½ pound Italian sausage (or chicken sausage)
  • ½ onion, diced
  • 3 garlic cloves, minced
  • 2 cups baby spinach
  • 1 apple, cored and diced
  • 1 tablespoon fresh sage, chopped
  • ½ tablespoon fresh rosemary, chopped
  • ⅓ cup unsweetened dried cranberries
  • ¼ cup pecans, roughly chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the butternut squash in half lengthwise and scoop out seeds.
  3. Coat squash halves with olive oil and season with salt and pepper.
  4. Place squash cut side down on a baking sheet and bake for about 40-45 minutes until tender.
  5. In a sauté pan over medium heat, cook the sausage until browned. Add onions, garlic, and spinach; cook until spinach wilts.
  6. Stir in diced apple, sage, rosemary, cranberries, and pecans; cook for an additional 2–3 minutes.
  7. Remove baked squash from the oven and scoop out some flesh (reserve for later use). Fill each half with the sausage mixture.
  8. Broil stuffed squash for another 5 minutes until golden on top.
