  • 1 Tablespoon corn starch
  • 2 Tablespoons water (or more if needed)
  • 4 cups French bread, cut into small ½ inch cubes
  • 2 eggs
  • ½ cup milk
  • ¼ cup cream
  • 2 Tablespoons light brown sugar
  • ½ teaspoon vanilla
  • ¼ teaspoons nutmeg
  • ¾ teaspoon cinnamon
  • 2 Tablespoons melted butter
  • 3 Tablespoons maple syrup
  • 1/3 cup chopped pecans

Instructions

  1. Prepare the apple filling by cooking chopped apples with brown sugar, lemon juice, spices, and cornstarch in a saucepan until soft.
  2. Cut French bread into small cubes and place in a bowl.
  3. Whisk eggs, milk, cream, vanilla, and spices together; pour over bread cubes and let soak for 15 minutes.
  4. Preheat oven to 350°F and line a muffin pan with parchment paper.
  5. Assemble the cups by filling each cavity with soaked bread mixture and pressing gently; top with cooled apple filling.
  6. Bake for 10 minutes; add pecan topping and bake an additional 12-15 minutes until golden brown.
  7. Allow to cool slightly before serving.
