  • ½ cup butter (room temperature)
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon apple pie spice
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • For Topping: ¼ cup melted butter, ½ cup sugar, 1 tablespoon cinnamon

Instructions

  1. In a saucepan over medium heat, bring apple cider to a boil; reduce to simmer until halved (20-30 minutes). Let cool.
  2. Preheat oven to 350°F and grease a 9×5 loaf pan.
  3. In a mixing bowl, beat butter and brown sugar until light and fluffy.
  4. Add in egg and vanilla until well combined.
  5. Stir in cooled reduced cider and dry ingredients until just mixed—do not overmix.
  6. Pour batter into the prepared pan and bake for about 50 minutes or until a tester comes out clean.
  7. Cool in the pan for 15 minutes before transferring to a cooling rack.
  8. Brush with melted butter and sprinkle cinnamon sugar on top.
  9. Allow to cool completely before slicing.
