  • 1 (9-inch) spelt pie crust
  • 1¾ cups prepared apple butter
  • 1 cup heavy cream
  • 3 large eggs
  • ½ cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon freshly grated nutmeg
  • ¼ teaspoon coarse kosher salt
  • Pinch ground cloves

Instructions

  1. Roll out the spelt pie crust and fit it into a 9-inch pie plate. Chill for 15 minutes.
  2. Preheat your oven to 375ºF. Blind bake the crust for 20 minutes using parchment paper and weights, then remove weights and bake an additional 5 minutes.
  3. In a large bowl, whisk together all filling ingredients until smooth.
  4. Pour the filling into the baked crust and bake at 325ºF for 45–55 minutes until edges puff up but center remains slightly wobbly.
  5. Cool on a wire rack for at least 6 hours before refrigerating.
