  • ½ cup granulated sugar
  • ½ cup butter (melted)
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 cups chopped apples (such as Pink Lady, Gala, or Honeycrisp)
  • ½ cup brown sugar
  • 1 ½ teaspoons ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8 x 5 inch loaf pan by greasing it or lining it with parchment paper.
  2. In a small bowl, whisk together the brown sugar and ground cinnamon; set aside.
  3. In a large mixing bowl, whisk eggs and granulated sugar until combined. Stir in melted butter and vanilla extract until smooth.
  4. Add flour, baking powder, baking soda, and salt to the wet ingredients; mix until just combined.
  5. Gently fold in chopped apples until evenly distributed.
  6. Pour half of the batter into the prepared loaf pan, sprinkle with three-quarters of the cinnamon mixture, then layer the remaining batter on top.
  7. Sprinkle the rest of the cinnamon mixture over the top and gently swirl it into the batter.
  8. Bake for about 35 to 45 minutes until golden brown and a toothpick inserted comes out clean. Tent with foil if necessary to prevent over-browning.
  9. Allow to cool completely before slicing.
